Anti-Inflammatory Muffins Made With Sweet Potato, Coconut, Cinnamon, Maple Syrup, And Ginger

Muffins are one of those foods that virtually everybody loves. That’s why today we’re offering up a recipe for tasty, antioxidant-rich muffins that have anti-inflammatory effects. They’re both delicious and loaded with organic ingredients that have positive health effects.

These muffins are built on a base of sweet potatoes, and these tubers deliver a lot of powerful nutrients. They’re packed with beta-carotene, which is great at purging free radicals from your system. Free radicals are nasty little particles capable of warping DNA and potentially causing cancer through mutation.

Sweet potatoes have several other healthy nutrients that act to prevent inflammation (both short-term and chronic), which is a symptom common to a host of different health conditions.

Ingredients:

  • 1 roasted organic sweet potato (enough to fill 1 packed cup)
  • 3/4 cup of coconut milk (organic)
  • 3 lightly beaten eggs (organic free range)
  • 1 cup of brown rice flour (organic)
  • 1/4 cup of coconut flour (organic)
  • 1/2 cup of pure maple syrup (organic)
  • 1 TBSP cinnamon (ground)
  • 1/8 TSP cloves (ground)
  • 1/8 TSP nutmeg (ground)
  • 1 TSP ginger (ground)
  • 1/2 TSP pink salt (Himalayan)
  • 2 TBSP olive oil (organic)
  • 1 TBSP baking powder

Preparation:

Start by preheating your oven to 400 degrees Fahrenheit and oiling your muffin tray. Cook your sweet potato on the middle rack of the oven for an hour. Remember to poke holes in it to allow steam to escape.

Let the potato cool once it’s finished cooking, then scoop out the flesh you need. Save the leftover skin; it makes an excellent casual snack for later and it’s absolutely packed with vitamins.

Put the cooked sweet potato in a bowl and mix in the almond milk, olive oil, and maple syrup. Mix this until it’s completely uniform. Mix the dry ingredients separately and then combine everything in a single bowl. Stir the resulting batter until it’s homogenous.

Pour your batter into your muffin tray and bake it on your oven’s middle rack for 30 to 35 minutes.
